Most everyone loves classic banana bread and each person seems to have their own special recipe. Today I'd like to share with you my mother's classic recipe, included with a secret ingredient, that I turned into miniature banana bread muffins (directions for a regular loaf are also provided). Ingredients:
- 1 cup of sugar
- 1/2 cup of shortening (or butter)
- 2 eggs, beaten
- 2 cups of flour (generous)
- 3 tablespoons of sour cream (weird I know, but this ingredient makes the recipe extra special)
- 1 teaspoon of baking soda
- 3 mashed bananas
- A pinch of salt
- 1/2 cup of chocolate chips (optional)
- 1/2 cup of chopped nuts (optional)
- 1/4 cup of marachino cherries (optional)
Directions:
- Cream together sugar and shortening.
- Add eggs, then bananas, and sour cream (dissolve soda in sour cream).
- Use a hand mixer to stir the ingredients used so far.
- Add dry ingredients (flour, salt, chocolate chips, nuts, cherries), mix in with a spoon.
- For muffins, grease the muffin pans and fill each spot about 3/4 full of mixture, have oven preheated to 325 degrees, and bake for 20 minutes or until golden brown (makes about 4 dozen).
- For a regular loaf, pour mixture into a greased loaf pan, have oven preheated to 350 degrees and bake for 45 minutes to 1 hour.
