Banana Bread Muffins

Most everyone loves classic banana bread and each person seems to have their own special recipe. Today I'd like to share with you my mother's classic recipe, included with a secret ingredient, that I turned into miniature banana bread muffins (directions for a regular loaf are also provided). Give it a try and let me know how it goes :)


Ingredients:

  1. Cream together sugar and shortening.
  2. Add eggs, then bananas, and sour cream (dissolve soda in sour cream).
  3. Use a hand mixer to stir the ingredients used so far.
  4. Add dry ingredients (flour, salt, chocolate chips, nuts, cherries), mix in with a spoon.
  5. For muffins, grease the muffin pans and fill each spot about 3/4 full of mixture, have oven preheated to 325 degrees, and bake for 20 minutes or until golden brown (makes about 4 dozen).
  6. For a regular loaf, pour mixture into a greased loaf pan, have oven preheated to 350 degrees and bake for 45 minutes to 1 hour.
  7. Let cool and enjoy :)
